Blackened Bacon Wrapped Scallops

These Blackened Bacon Wrapped Sea Scallops are low carb, keto friendly, are super quick and easy to make!

 12 Sea Scallops
 12 Slices of Bacon
 1 tbsp Blackened Seasoning
 2 tbsp Butter

Pre-cook bacon (I used a microwave oven for this) until it's partially cooked. Don't overcook the bacon and make it crisp, otherwise you won't be able to wrap it around the scallop!


Wrap each scallop with a slice of bacon and secure with a toothpick.


Sprinkle each scallop with blackened seasoning.


Heat pan over medium heat for 1-2 minutes. Add 1 tbs olive oil and when the oil is hot (easily swirled in the pan), add 2 tbs butter. Swirl the butter in the pan to mix the butter and oil together.


Add the scallops to the pan and cook for approximately 2-3 minutes on each side, spooning the liquid over the tops of the scallops. Cook until the scallops are cooked through and opaque.

Note: You can turn the scallops on their sides (like I did) after they're cooked in order to crisp up the bacon if you like.


Remove scallops to a plate and remove the toothpicks. Spoon liquid from the pan over the top of the scallops, serve and enjoy!
