I came up with this recipe on the fly for a local BBQ and chili cookoff where I took 2nd place (The pulled pork took first). It's delicious, full of flavor but not spicy. This is great with tortillas or cornbread.
Yields8 ServingsPrep Time10 minsCook Time2 hrsTotal Time2 hrs 10 mins
12ozBlack Pepper Bacon, chopped
2lbsGround Beef(85/15 if possible)
½lbRound Steak or stew meat, chopped(really any steak would do for this)
1Yellow Onion, diced
1Green Bell Pepper, chopped
1Red Bell Pepper, chopped
4Cloves Garlic, minced
1Serrano PepperIf you want it spicy, use 2-3 serranos instead.
114oz can Diced Tomatoes w/ With Chipotle Peppers
14oz can Tomato Paste
116oz can Pinto Beans
116oz can Kidney Beans (Optional)
1cupBeef Broth
2 1/2 tsp smoked Paprika
3tbspChamayo Chile Powder
1tbspAncho Chile Flakes, crushed(could probably use powder instead)
2tspSalt
2 ½tspCumin
2tspDried Oregano
1
Chop bacon and add to a 3qt pot. Cook over medium heat. Meanwhile, chop the rest of the ingredients.
2
When the bacon is fully cooked, add the ground beef and steak. Cook until no longer pink, breaking up the clumps of ground beef. Take meat out of pot and set aside.
3
Add the diced peppers, onions, garlic and serrano to the pot and cook until softened.
4
Add the meat back to the pot and and all the rest of the ingredients. Still well, cover and cook on low for 2 hours stirring occasionally (and trying not to keep tasting it, because it's going to smell REALLY good!). Optionally, you can put all the ingredients into a crock pot and cook on low.
5
Serve with shredded cheese and tortillas, or better yet, cornbread!
