This Short Rib Ragu is probably one of the best dishes I think I’ve ever made! My kids and girlfriend absolutely loved it and just couldn’t get enough of it. Serve with French bread if you like.

This Spanish Paella is an impressive dish made with Chicken, Shrimp and Chorizo. You can even add additional seafood to it such as mussels, littleneck clams or squid.
This low carb, Keto Friendly dish is delicious! While it does have a little spice to it, it’s not too bad.
These Blackened Bacon Wrapped Sea Scallops are low carb, keto friendly, are super quick and easy to make!
Last week I was finally able to take a small vacation, so I took my kids and the girlfriend to the Texas coast. I’ve got to say, I absolutely loved South Padre! If you’ve not been, I highly encourage you to give it a try – not during spring break of course, unless that’s your thing… I also recommend you give the guys over at Captain Murphy’s a try if you decide to go saltwater fishing as we did. Also highly recommend you give SPI Excursions a shot if you decide you’d like to go Parasailing – what fun!!
Anyhow, today I decided to make some pan fried fish (since we had a few fish from fishing in South Padre) as well as some chicken (because my daughter doesn’t like to eat fish, just catching them!)
It’s getting into Hatch Green Chile season and my local HEB had some freshly roasted green chiles, so I thought I’d make a sauce to go over the fish and chicken.
Panang Thai Curry is probably my favorite of all Thai curries. I’ve made it with chicken, pork as well as shrimp.
This Lemon Garlic Butter Shrimp with Zoodles dish is absolutely delicious! Besides the fact that it’s keto friendly, healthy, and glutten-free, it’s also a one pan meal so cleanup is a breeze. As an added bonus, even my kids loved it!!
My family often asks me to make my Biscuits and Gravy on the weekends. It’s great served with eggs, orange juice and coffee!
My dad loved mushrooms, and he always ordered veal Marsala when we went out to restaurants. My mom didn’t buy veal very often, so she adapted this recipe for chicken and made it on special occasions. He was also very fond of white Burgundy wine, which makes a wonderful accompaniment to this dish.
