Is it Taco Tuesday already? These keto friendly Shredded Beef Tacos are so easy to make and great for a busy weeknight. Serve with Spanish Rice and beans (charro or refried) for a complete meal.

Set Instant Pot to sauté or heat skillet on high heat.
Rub Montreal Steak Seasoning on sides of the chuck roast and brown in oil on all sides.
Pour 1/2 jar (Approximately 16oz.) tortilla soup over chuck roast and cook on manual setting (high pressure) for 70 minutes. Allow pressure to release naturally.
** This is very important otherwise the meat will come out very tough!
Shred beef with a fork and serve on tortillas with guacamole, lettuce, sour cream, shredded Mexican cheese or whatever you prefer. Enjoy!
